Quince

Quince is a species of tree in the rose family and is closely related to the apple, pear and mountain ash. Quince is not suitable to eat raw because of the sour and hard flesh. However, quinces are very suitable for processing into compote, jam, marmalade, jelly, fruit paste (similar to bonbons), cake, fruit bread, fruit juice, tea, wine and liqueur.
