Fruit tiramisu

Necessities

175 grams fresh raspberries
175 grams fresh blackberries
500 grams frozen summer fruit (you can freeze this yourself)
125 grams fine sugar
Half a pack of lady fingers
4 eggs
500 grams mascarpone
1 vanilla pod
125 ml whipping cream

Preparation method

1. Combine the sugar and frozen fruit in a saucepan and cook over medium heat for 5 minutes.
2. Cover the bottom of a baking dish with the lady fingers and divide the cooked fruit evenly between the lady fingers.
Then let it cool down for a while. 3. Split the eggs.
4. Place the yolks with 50 grams of sugar in a mixing bowl and beat for about 5 minutes until a light yellow cream is formed.
5. Put the mascarpone in the second bowl and add the pith from the vanilla pod.
6. Stir with a fork.
7. Add the egg mixture and gently mix together.
8. Whip the cream with the rest of the sugar.
9. Gently mix the whipped cream with the mascarpone.
10. Spoon the entire mixture into the baking dish and cover.
11. Leave to set in the fridge for at least 2.5 hours.
12. Top with raspberries and blackberries.
