Fig-Berry Pie
Necessities
4 figs
200 grams blackberries
200 grams blueberries
1 tablespoon lemon juice
70 grams almond powder
240 grams oat flakes
2 tablespoons corn flour
2 tablespoons maple syrup
3 tablespoons butter
lemon zest
Preparation method
1. Heat the oven to 180 degrees.
2. Mix the almond powder, corn flour, salt and oat flakes together.
3. Add the butter and 1 tablespoon of maple syrup.
4. Make a dough ball of this.
5. Let the dough ball rest in the fridge for 30 minutes.
6. Mix the blackberries with the rest of the maple syrup, lemon juice and lemon zest.
7. Divide the dough ball over the baking tin and prick several holes in the dough with a fork or skewer.
8. Bake the base in the oven for 10 minutes.
9. Fill the bottom with 100 grams of the blueberries and 100 grams of the blackberries and bake for a further 35 minutes.
10. Divide the rest of the blueberries and blackberries over the cake.
11. Finish with the figs and sprinkle some sugar to taste all over.
