Cherry Pie

Necessities

300 grams flour
30 grams yeast
25 grams butter
Pinch of salt
3 tablespoons (olive) oil
1.5 deciliter milk
1 egg yolk
Breadcrumbs
3 tablespoons (caster) sugar
700 grams cherries from a jar
60 grams sugar
4 teaspoons potato starch

Preparation method

1. Preheat the oven to 180 degrees.
2. Put the milk in a pan and make it lukewarm.
3. Put the yeast in it and dissolve it.
4. Take the flour and make a well in it.
5. Add the butter, sugar, oil and egg yolk.
6. Add the milk mixture.
7. Knead the entire mixture into a smooth and airy dough.
You can do this by hand or with a mixer with dough hooks. 8. Dust some flour on your counter and knead the dough again.
9. Put the dough in a warm place for half an hour to let it rise.
Cover it with a damp cloth. 10. Meanwhile, drain the cherries and collect the juice.
11. Take the potato starch with a little of the juice.
12. Put the potato starch mixture with the rest of the juice in a pan.
13. Add the 60 grams of sugar.
14. Stir well.
15. Add the cherries and stir gently.
16. Let the filling rest for 30 minutes.
17. Now take out the dough and knead some more.
18. Take about two thirds of the dough.
19. Roll out into a round sheet the size of your baking tin.
20. First grease your baking pan with butter.
21. Place the round piece on the bottom of your baking pan.
22. Line the rest of the baking pan with the dough.
23. Pour the cherry filling into the baking pan.
24. Roll out the rest of the dough and cut out strips.
25. Place the strips over the top of the cake in a diamond pattern.
26. Place the cake in the middle of the oven and bake for 25 minutes.
